Example:
When preparing a pork roast, add approx. 1 litre of water, one carrot, half an onion and half a stock cube to the dripping pan. Place the pork roast, skin side down first, on the wire rack directly above it. Turn after about 20 minutes. The roast becomes evenly browned and very juicy. The crackling turns crispy and crunchy. The juices collected in the dripping pan can then be blended into a delicious sauce. The same method can also be used for beef, game, poultry and fish.
